SPICY MUSHROOM GRAVY



This is a recipe i like to prepare on a rainy season when you can't go out, still you need a meaty taste from a veggie, perfect with steamed rice or can be used to make sandwiches. I tried preparing mushroom gravy in various method, but this is the one i find the best among all. It taste like a non vegetarian dish when you use the spices in right proportion





 
Clean the mushrooms by gently rubbing them using a paper towel or kitchen towel this would get rid of the dirt that might be sticking on to it. Do not wash the mushrooms, as the dirt will not be removed and you might lose the texture. In this recipe i used white mushrooms, you can use any variety of your choice but the cooking time varies, as certain mushroom varieties takes longer to cook.

SERVES -2 adults

You will need
  • Mushrooms- 8oz cubed any variety
  • onion- 1 big sliced
  • tomatoes-2 medium sliced 
  • chilli powder - 1 teaspoon
  • coriander powder- 1 teaspoon
  • garam masala- 1/2 teaspoon
  • ginger garlic paste -2 teaspoon
For seasoning
  • Oil- 2 tablespoon
  • mustard seeds- half teaspoon
  • cumin seeds- half teaspoon
  • curry leaves few (optional)

Heat the oil in a pan, add the mustard and cumin seeds once it splutters, add the curry leaves. Now add the ginger garlic paste in the oil, fry for few seconds to remove the raw flavor. Then add the onions with little salt and saute until it becomes transparent it usually takes about 5mins, once its done add the tomatoes, cover the pan with lid and allow the tomatoes to cook in medium flame for about 7 mins or until it turns mushy oozing out little oil. Now its time to add the spices such as the chills, coriander and garam masala. Close the lid and cook for about 2 mins. Then add in the mushrooms and allow to cook well with the gravy for about 5 mins or until it is cooked well.
Garnish the gravy with cilantro or parsley and serve hot with steamed rice or flat bread.
