CAULIFLOWER CURRY (VEGAN RECIPE)
This is a spicy indian style curry goes well with rice, naan or roti, or with any bread of your choice. A low calorie diet . The roasted cauliflower gives great taste and texture to this recipe.

INGREDIENTS
- cauliflower - 1/4 pound
- carrot- 1 nos
- onion- 1 big
- tomato`1 big
- ginger and garlic paste-1 teaspoon
- coriander powder- 1 teaspoon
- red chilli powder- 1 teaspoon
- garam masala-1/2 teaspoon
- bay leaf-1,cumin seeds- 1/2 teaspoon for tempering
- oil-2 tablespoon
- to grind you will need coconut- 3 tablespoon
- cloves-3, cinnamon -1 inch stick, fennel seed- 1/2 teaspoon, cardamom pods-2
- salt to taste

INSTRUCTIONS
- heat the oil in a pan, once oil is hot add the bay leaf and cumin seeds
- now add the ginger garlic paste, sauce until the raw flavor is gone, now add the onions and carrots, saute until it becomes soft, add little salt to make the process sooner
- next add the tomatoes and wait until it becomes soft and mushy
- meanwhile in a separate pan, add a tablespoon of oil and roast the cauliflower until brown as shown in the picture below, the roasted cauliflower gives nice meaty texture and flavor to the curry

- now add in the coriander powder, chill powder and garam masala to the gravy
- meanwhile in a blender or mixer add the coconut, cloves, cinnamon, fennel seeds,cardamom and make into a smooth paste
- once the masala is cooked, add the roasted cauliflower and the grinded coconut mixture to the curry and simmer, cook for about 5 mins.
- garnish with coriander leaves
- Serve hot with steamed rice or bread.
