CRISP AND CHEWY COCONUT MACAROONS

These are so yummy and can't stop having just one. Perfect as a tea time snack or for holiday seasons. Give this a try.
INGREDIENTS
- Coconut -11/2 cup shredded or desiccated (i have used unsweetened )
- egg whites-3
- sugar- 1cup about 200 gms
- cake flour- 1 cup
PREPARATION
- Add the egg whites and sugar in a heat proof bowl. combine them together
- inorder to get that crispy outside and the chewy soft inside you need to place the bowl on a top of the boiling water to just warm the egg whites and sugar together. Just warming is enough, do not heat it.
- Now add the cake flour to the egg whites mixture, fold nicely, as the cake flour will give thick chewy texture and holds well the macaroons.
- next add the shredded coconut, mix well and refrigerate for about 2 hours to set.
- Take a scoop of the mixture place it in a baking sheet greased with oil or you could also use the cake piping bag to pipe the mixture for better looking macaroons. i have used the piping bag for my macaroons.
- Bake in a preheated oven for about 15 to 20 minutes until they are golden brown.
You could also dip the base of the macaroons in dark chocolates and wrap as a gift for the holiday seasons.
