WHOLE WHEAT CHOCOLATE CHIP MUFFINS

Who doesn't love muffins? especially when it is delicious, soft, fluffy and overall healthy. This whole wheat muffins is great as a grab and go breakfast or as a snack or in your kids lunch boxes. 



Whole wheat flour - 1 cup
Eggs - 2
sugar /brown sugar - 1 cup
coconut oil/melted butter - half cup
All purpose flour - 1 cup 
pure vanilla extract - 1 tablespoon
baking powder - 2 teaspoon
chocolate chips/nuts- 1 cup
milk - 1 cup

TIPS AND TRICKS

When you use flour, sift them to avoid lumps so the muffins are soft and fluffy. This batter makes a total of 12 medium sized muffins.
You can either sift all the flour together and mix in the baking powder, if not add a teaspoon of baking powder at a time while incorporating the flour, both works. Just that if you want the mixing to be one pot this is the way to go. 
When adding the milk i used whole milk, because i personally think whole milk is much healthier than reduced fat or fat free milk. You can use any milk of your choice.
I used semi sweet chocolate chips in this recipe because my kids love chocolate chips, you also add some dark  chocolate chunks , if not totally skip adding the chocolates instead add some dry fruits or nuts for more healthier options.

If you are a vegetarian , you can substitute eggs for yogurt. The muffins goes into a preheated oven at 425F for 15 mins and then reduce to 325f for another 10 mins, this makes the muffins puff very well , makes it moist and delcious without being dry.
