HEALTHY FINGER MILLET COOKIES

Finger millets (ragi) cookies are unbelieveably healthy plus yummy for kids and adults. Finger millets are gluten free, rich in calcium, protein also have good amounts of iron and minerals which is essential for kids growth and developments. Just like oats they are heart healthy and nutritious. The cookie is simple and great as a snack or in lunch box. To be honest, i never thought this millet cookie would be so good, they are crunch, smooth, melts in your mouth. Above all my toddler completely enjoyed this cookie.







Finger millet flour (ragi flour) - 11/2 cup
Plain flour - 1/2 cup
honey - 2 tablespoon
brown sugar - 1 tablespoon
baking soda - 1/2 teaspoon
butter - 3 tablespoon

PREP TIME : 1 hr 15 mins        COOK TIME: 20 TO 25 mins     YEILDS : 15 medium sized cookies

Combine finger millet flour, plain flour, baking soda
make a cookie dough consistency

In a mixing bowl, add butter at room temperature, Whisk it well, now add the honey and brown sugar, whisk nicely until the butter and sugar are combined. Sift the finger millet flour and plain flour with a half teaspoon of baking soda. Combine the flour and butter mixture using a spoon to form a cookie dough consistency as shown in pic and refridgerate for an hour for the dough to set. Now cut the dough into small cookie like portion or you can also use a cookie cutter for perfect shape, i just used my hands to shape it. But i recommend using a cookie cutter for more appealing shape. I sprinkled some sugar on top of the cookie, which my toddler likes it. Place the cookies in a parchment paper with equall distance apart and bake in a preheated at 350F or 180C oven for 20 to 25 mins. You will notice brown edges once cooked. Place it in a cooling rack and allow the cookie to cool down completely. I made this cookie for kids, so i used butter, if your are fat conscious then you can use egg and olive oil instead of butter, they taste absolutely great. Enjoy these with your friends and family.
