CHICKPEA/CHANNA MASALA



Channa masala also known as chole masala/ channay/ chickpea masala is one popular indian recipe both savory and spicy . The boiled Chickpeas are cooked with indian spices in a onion tomato gravy, making a great blend of all flavors in one recipe.




boiled chick peas - 2 cup
ginger garlic paste - 1 tablespoon
onion - 1 big sliced
tomato - 2 finely chopped
cumin powder - 1 teaspoon
coriander powder - 2 teaspoon
green chili - 2 slit
red chili powder - 1teaspoon
garam masala - 1 teaspoon
mango powder - 1 teaspoon
oil/ghee/butter - 2 tablespoon
coriander leaves for garnish
salt to taste

for seasoning
cloves- 6
bay leaf -1
cinnamon - 1 inch stick broken
cardamon pods- 3 cracked 
cumin seeds - half teaspoon
star anise - 1

PREP TIME : 20 mins                         COOK TIME : 30 mins                   SERVING : 4


You can use canned chick peas or dried chick peas,if you are using the dried variety, soak it for atleast     6 to 8 hrs and pressure cook them with the required amount of water for about 5 whistles. For one cup of chickpeas use two cups of water with half teaspoon of salt to boil them.
Heat a pan, pour oil, add the spices listed above for seasoning, once they turn light brown, add the ginger garlic paste , saute well for a minute until the raw flavor is gone and then add the sliced onions and slit green chilis, once it is transparent, add the cumin, coriander, red chili powder fry them with the onions for few seconds. Now add the tomatoes, close the pan with a lid and cook until they turn mushy. Add about a teaspoon of dry mango powder, mix it up with the gravy. Drain the boiled chickpeas and add them to the gravy, do not use the boiled chick pea water, i experimented using them for the gravy, but without the boiled chickpea water the gravy tastes better. Well, its time to add the garam masala to the gravy. Add the required salt and check for seasoning and adjust accordingly. if the curry feels too thick, pour about half a cup of water, cook for another 10 mins, until you see the oil floating at the top. Garnish with cilantro/ coriander leaves. Serve these channa masala with naan or roti. They make perfect dinner recipe for friends and family.

Note :
Mango powder is recoomended but if you dont have mango powder, you can substitute with a half teaspoon of lemon juice.
