hard boiled eggs - 5
onion - 1 big sliced
ginger garlic paste - 1 tablespoon
coriander powder - 2 teaspoon
cumin powder - 1 teaspoon
green chili - 1 or 2
red chili powder - 1 teaspoon
garam masala - 1/2 teaspoon
lemon juice - half teaspoon
oil - 2 tablespoon
salt to taste
To grind
fresh or frozen coconut - 3 tablespoon grated or sliced
fennel seeds - half teaspoon
For seasoning
bay leaf - 1
cloves - 4
cinnamom - 1 inch stick broken
star anise - 1
PREP TIME : 20 mins COOK TIME : 20 MINS SERVINGS : 4
- You will need 5 hard boiled eggs, make a small slit on sides, so that the eggs absorbs the flavor from the curry.
- So to make the curry, you need to prepare the masala, In a blender, add the listed ingredients and grind them to a smooth paste and keep them aside.
- Heat a pan with oil, once hot add the seasoning spices listed above, once they turn light brown, add the ginger garlice paste and fry for a minute until the raw flavor is gone.
- Now add the sliced onion, green chilis and fry until they turn light brown. Now add the cumin,coriander, red chili powder to the onions fry for a minute.
- Add the grinded masala mixture to the curry with a quarter cup of water, add the required amount of salt and keep the flame on medium, allow the curry to cook for 10 mins.
- Now drop in the boiled eggs to the curry with a half teaspoon of garam masala and lemon juice. Cook for another 5 mins on slow flame.
- Garnish with cilantro and serve hot with bread or steamed rice.
