VANILLA CUPCAKE WITH CUSTARD CHOLOCATE FROSTING FROM SCRATCH

Who doesnt love cupcakes?. When it is homemade right from your oven it is even more delicious and safe with no preservatives. These are so much fun to decorate and a easy way to please your kids. I will walk you through all the steps required to prepare this delicious treat.






For cake
eggs - 2
butter - 1 stick (4 oz/ 8 tablespoon)
sugar - 100 gm
Plain flour/ maida - 200 gm
pure vanilla essence - 1 teaspoon
whole milk - 50 ml
baking powder - 1 teaspoonful
baking soda - a pinch
salt - a pinch 
canola oil - 2 tablespoon

For Frosting
milk - 40 ml
vanilla custard powder - 1 teaspoonful
milk chocolate - 150 gm
canola oil - 2 tablespoon

PREPARING CUPCAKES 

YEILDS : 9 medium sized cupcakes      PREP TIME :  15 MINS            BAKE TIME : 20 to 25 mins

Preheat the oven to 350F or 180 celsius. In a bowl add the butter, which is at room temperature. Whisk the butter nicely until they are smooth, now crack open two eggs and add to the butter, Beat well, add the sugar combine together using the whisk. Now add about a teaspoon of pure vanilla essence, do not try the imitation one, its always best to use the pure vanilla for great flavor. Now pour the whole milk, mix well. Sift the plain flour along with baking powder and baking soda to the wet mixture. Sifted flour are lighter, so this helps the batter to rise equally, making the cake spongy and soft. Gently fold the flour to the wet mixture. Now pour the two tablespoon of oil to the cake batter and combine well.  Make sure the cake batter is not too thick or too thin. If it is thick add little milk, if it is thin add in some sifted flour about a teaspoon. Pour the cake batter into the dusted cupcake molds halfway leaving room for the cake to rise. Dusting the cupcake molds is by coating the molds with oil or butter and then dust some plain flour as shown in the picture or make it simple by using a cupcake liner. Place it in the preheated oven for about 20 minutes until a toothpick inserted comes out clean. It took exactly 20 mins for me to bake, you will see light brown edges in the cupcakes. It make take 15 to 25 mins depending on your oven. Do not overbake the cakes, as it might turn out to be little rough. Place it in the cooling rack and allow it to cool.


PREPARING FROSTING

PREP TIME : 5 MINS                            COOK TIME : 10 MINS

This frosting is so delicious and is slightly different from the regular chocolate frosting. Begin by pouring the milk to the pan, add a teaspoon of vanilla custard powder, mix well avoiding lumps. Switch on the stove, keep in medium flame allow the milk to heat up by whisking continuously as the milk heats up you will see, it begins to thicken as shown in the picture, Keep the flame from mediun to very low. Now add the chocolates to the custard milk mixture, i used hersheys milk chocolates, you can use any chocolates of your choice. The chocolate will begin melting, continue whisking, pour the oil combine well and switch off the stove. Allow the frosting to cool down by keeping in the fridge for half an hour. 


DECORATING CUPCAKES

This is a simple and easy decoration using ziploc bags. Just pour the frosting into the ziploc bag or piping bag. Begin to make swirls. Top it up with some grinded oreo cookies or sprinkles.

TIPS
  • The oil will prevent the cake from drying and keeps it soft, moist. whereas the butter gives great flavour to the cupcakes.
  • If you accidently overcooked the cupcakes, inorder to make it soft, sprinkle some sugar water to the cake before frosting, in that way it becomes more moist.
  • The oil added to the frosting gives a glossy finish and richness.
  • I used canola oil, but you can use any mild flavorless oil like sunflower oil.
