FRIED CHICKEN NOODLES (FRIED THIN SPAGHETTI) street style, without sauces

Street foods always has its own flavor and taste, when it comes to noodles, fried noodles are my favorite. This is one of the version, which i grew up eating, it is so full of flavors from the chicken, eggs and the masalas added, well you can call it as indian version or indo-chinese version. Whenever i have craving for these fried noodles, i can prepare it at home within few mins with just few ingredients, hubby loves it everytime i cook this yummy noodles.



Here i have used thin spaghetti, Well there is no big difference in taste but the recipe is regularly prepared with egg noodles or just plain noodles. This is a simple recipe, tastes heavenly with no sauce added, yeah no sauce. The prep time is high because it takes few minutes for the noodles to cook. Boil the noodles with some salt until its done, do not over cook as we will be tossing it with the veggies, over cooking might make it mushy or makes it very soft.





Boiled thin spaghetti/noodles - 8oz (226 g)
eggs - 3
onion - 1 big sliced
cabbage - 1 cup finely chopped
red chili powder - 1 teaspoon
garam masala - 1/2 teaspoon
chicken curry/gravy - 3 tablespoon
oil - 2 tablespoon
salt to taste
ground pepper (optional) - 1/2 teaspoon
sauted onions, cabbage, 
cooked noodles
egg added







PREP TIME : 30 MINS         COOK TIME : 20 MINS              SERVES: 2 TO 3

Begin by heating a wide skillet or wok,which makes easier to toss the noodles. Pour a tablespoon of oil, add the onions and cabbage saute on medium high flame with little salt, garam masala added. usually takes around 7 mins, crack open three eggs to the sauted mix, scramble and combine well with the onions and cabbage as shown in the picture. Toss in the boiled noodles, and saute well, add the red chili powder, mix well and then add the chicken curry/gravy with small chicken peices. You can make use of the leftover  chicken curry or beef curry for this recipe. I know it might sound little weird adding curry to the noodles, trust me this gives great flavour to the noodles when fried so there is no need of any sauces or broth to this recipe as a flavoring agent. Fry the noodles well on medium high fame by tossing it, the noodles will break while saute but that is totally fine. Check for seasoning, if needed add salt, Now add the another one tablespoon of oil, saute well for a minute. You need to saute the noodles for 5 to 8 minutes until the noodles are mixed well with the chicken curry. Sprinkle it with some ground pepper (optional). Serve hot as it is.
