BROCCOLI WITH ALMONDS STIR FRY (lunch box recipe)

This is simple and quick recipe, perfect as a lunch box recipe. I love broccoli and  can eat them however it is prepared, but the challenge is to make my kid to eat broccoli, so i tried making this recipe and now it is her favorite veggie. Begin by cutting the broccoli into small florets. Wash them in a hot running water.





broccoli - 1/4 pound
 raw sliced almonds - 1 tablespoon
garlic cloves - 3 finely chopped
butter/oil - 1 tablespoon
salt to taste

PREP TIME : 5 MINS                     COOK TIME : 10 MINS                   SERVES : 2

Heat a pan add oil/butter, some sliced almonds, chopped garlic and roast them util they turn light brown. Then add the broccoli florets,saute well on a medium flame, cook until it becomes little soft but still some crunchiness remains. Usually this takes about 10 mins. Serve it as a side dish Perfect for kids who hates to eat veggies. Broccoli is packed with nutrients and the roasted almonds gives little cruchiness and kids will love it.


NOTE
  • If you are a weightwatcher avoid butter, use just a teaspoon of olive oil, it will still taste delicious also add some ground pepper.
  • For toddlers while cooking add about a 20 ml of water, close the lid, allow the broccoli to be nice and soft, once the water completely evaporates, switch off the stove.
