Bitter gourd is a tropical vegetable originated in south-east asia as the name suggest these are bitter tasting veggies, however this is widely consumed for its countless health benefits. Bitter gourd is very low in calories and rich in antioxidants, folates, flavinoids, fibre, vitamins and minerals. These contain a plant insulin known to lower the blood sugar levels. This is one such diabetic recipe, on regular consumption helps to lower the blood sugar levels.








Bitter gourd - 2 sliced thin
red chili powder - 1 teaspoon
salt - half teaspoon
tamarind paste or lemon juice - half teaspoon
oil- 3 teaspoon

PREP TIME: 10 MINS                 COOK TIME: 15 MINS                   SERVES: 3

Bitter gourd frying in the pan


This is simple and quick side dish. Slice the bitter gourd as thin like that of a chips as shown in the picture. Add the red chili powder,salt and a teaspoon of lemon juice or tamarind to neutralize the flavor. Mix well and let it marinate for 10 mins. Heat a wide pan, pour the oil and drop the marinated bitter gourd to the oil and fry well on a medium flame. Place the bitter gourd slices separately to get that crispy texture. Flip the other side and add little more oil to cook. Cook until they turn dark brown in color with crispy edges. saute occasionally. This takes around 10 to 15 mins. This is served as a side dish for dhals or any curries. Very soon i will post bitter gourd jiuce for diabetes.
