CARROTS AND BEANS STIR FRY (PORIYAL )

I make this side dish atleast once a week, a popular south indian stir fry. This is an healthy, delicious, colorful vegan recipe, usually served as a side dish. My family is not a big fan of veggies but they love when i make it this way. It is simple and quick. The veggies give nice roasted texture with just little oil. This is the easier way to encourage your kids to consume more veggies. The peanuts or channa dhal gives the crunchiness to the dish.






carrot - 4 medium sized
french beans - 1/2 pound
onion - 1 small sliced
green chilli ( optional) - 3 slit lengthwise
oil - 1 tablespoon
mustard - half teaspoon
channa dhal - 1 tablespoon or peanuts - 2 tablespoon
salt to taste
curry leaves/ coriander leaves to garnish


PREP TIME : 5 MINS                       COOK TIME: 10 MINS                            SERVES : 4



Chop the carrots and french beans finely as shown in the picture. Heat the pan with oil, once oil is hot, add the mustard seeds, after the mustard seeds splutters, add the channa dhal or peanuts to the oil and fry until they are roasted well. Now add the sliced onions and green chilis and saute well for a minute. You need not wait for the onions to turn transparent. Add the beans and the carrots, saute on a medium flame for about 5 mins. Then close the lid and allow the veegies to cook for another 5 mins. Open the lid, stir well and switch off the stove. I prefer half cooked veggies. If you want the veggies to cook thoroughly then extend your cooking time. Garnish with finely chopped cilantro or curry leaves.

NOTE
If you dont have green chilis handy, you can use red chili flakes instead. Some like to add one beaten egg to it , just to add protein and kids love it.
