RESTAURANT STYLE CAULIFLOWER FRY /GOBI 65/CAULIFLOWER 65

This is a popular street food in India. The cauliflower florets are mixed with spiced batter and fried, which tastes crispy and delicious. Great as an appetizer or starter for all occasions. The complete guide with step by step instructions. Cut the cauliflower into small bite sized florets. Take a bowl of hot water, drop the florets with some salt and turmeric, let it sit for 3 to 5 mins, after which drain the water completely and pat dry the florets and keep them aside.




Cauliflower - 2 cups of florets
red chili powder - 2 teaspoon
ginger garlic paste - 1 teaspoon
garam masala - 1/2 teaspoon
semolina - 1/2 teaspoon
all purpose flour/maida - 3 teaspoon
corn flour - 4 teaspoon
lemon juice - 1 teaspoon
salt - 1 teaspoon
oil to fry

PREP TIME : 10 mins                   COOK TIME : 15 mins

  • In a separate bowl, add the corn flour, all purpose flour, semolina, red chili powder, ginger garlic paste, lemon juice. 
  • Mix well and make it to a thick batter, if needed add a couple of teaspoons of water to make the batter, which i used here. 
  • Once the batter is ready, drop the florets into the batter, coat well with the batter. Meanwhile heat the fryer or a pot for deep frying. 
  • Once hot, drop the coated florets, keep the flame on medium high, fry until they turn crisp and brown.
  •  Use kashmiri red chili powder for red color, usually in restaurants they add red food color for more appetizing look. But i dont recommend adding food color, as they look great as it is once fried. 
  • To make it more crispy and to retain the crispness, double fry the florets, that is, once the first batch is fried, wait till the other batches fry, then again fry the first batch to make it more crisp. 
  • Finally fry few curry leaves and green chilis , garnish them on top of the fried florets. You can also shallow fry the cauliflower florets, but make sure it is fried on all sides. These are simple and tasty vegan starters.
