QUICK VEGAN FRIED NOODLES/SPAGHETTI

Vegan fried noodles are quick and simple recipe, yet delicious perfect for those busy working days or after school or work, an easy recipe to cook in no time. Follow the step  by step guide to prepare the fried noodles. If you are in a hurry, you can boil the spaghetti ahead of time in that way it is easy to cook when you get back from your day work. If you are using spaghetti, i recommmend using thin spaghetti, which tastes like noodles. In this recipe i used thin spaghetti. You wont believe that there is no sauces added to the noodles. Here is what you will need.





boiled spaghetti/noodles - 200 grams
carrots - 2 finely chopped
cabbage - 1 cup chopped into thin strands
onion - 1 cup sliced thin
dried oregano/italian seasoning - 1/2 teaspoon
oil - 3 teaspoon
distilled rice vinegar - 1/2 teaspoon
ground black pepper - 1/2 teaspoon
red chili powder or paste - 1/4 teaspoon
salt as required

PREP TIME : 20 mins               COOK TIME : 10 mins        SERVINGS : 2

  • Heat a wide skillet, pour two teaspoon of oil and the dried italian seasoning. Keep the flame on medium high, once oil is hot add the veggies and saute well. 
  • You can add any veggies of your choice, i recommend veggies such as bell peppers, mushrooms and grated zucchini. 
  • Now add half a teaspoon of salt and quarter teaspoon of red chili powder to the veggies and saute well. 
  • Next add the boiled spaghetti, saute well . If needed you can break the noodles and saute for 3 mins. 
  • Now pour the vinegar, combine well and adjust the salt accordingly. Make sure you add some salt while you cook the noodles/spaghetti. Finally add a teaspoon of oil on top of the spaghetti.  
  • Mix well, sprinkle the ground pepper, saute well for a minute and serve hot


TIPS
If you can add even seafoods like shrimp or calamari it gives a nice different taste
Add two beaten eggs to the veggies and prepare as a egg noodles too.
Remember fried noodles are always cooked on high flame, in that way the veggies are cooked and crunchy.
