GREEN RICE/CORIANDER/CILANTRO RICE

As the name suggest this rice recipe is an colorful delicious recipe, the rich green color is from the cilantro combined with some great flavors, a perfect lunch box recipe for kids and adults.
The cilantro rice has great texture and the peanuts/cashews gives nice crunchiness, whereas the tamarind used in the chutney gives little tanginess which balances all the flavors very well. Please follow the link below as how to prepare the coriander/cilantro chutney/

COOK TIME : 10mins SERVES : 1 OR 2
As with the help of this chutney the green rice is prepared. In a wide pan or skillet, pour the oil, once hot, add the mustard seeds, heads up mustard seeds splutters in hot oil, once it stops spluttering, add the peanuts, roast well with the oil, until it is crisp. Then add the coriander chutney, mix well with the oil, Now add the cooked rice to this with the required amount of salt. Make sure the rice is not very hot, as super hot rice may become mushy when you saute. We are looking for nice texture of the rice, without the stickiness. So let the rice cool down completely before mixing it with the chutney. Once done, check for salt and adjust accordingly. Saute well for 5 minutes on medium high flame. Garnish with finely chopped cilantro. Remove the pan from stove serve as it is or with some fries or hard boiled eggs. These are perfect as a side dish or in lunch boxes.
TIPS
You can make use of leftover rice for this recipe. If you prefer for more tanginess, i recommend using some lime or lemon juice.
