Potato and french beans stir fry/Poriyal/Roasted

This is an delicious side dish for any occasion. They are quick and easy to make with all you got in your pantry. I normally add any leftover veggies from my fridge to the potatoes and it tastes great. Goes great with all variety rice, curries and even grilled chicken. Give it a try. If you are making this for kids, just add a pinch of chili powder.
French beans - handful
onion - half sliced
red chili powder - 2 teaspoon
turmeric powder - 1/4 teaspoon
mustard seeds - 1 teaspoon
oil - 2 tablespoon
coriander leaves to garnish
In a pan, pour the oil, once hot, add the mustard seeds, after it splutters, add the sliced onions, just fry for few seconds, don't have to wait for it to soften, then to this add in the potatoes and beans, mix them well, add a half teaspoon of salt, mix and close the lid, cook it on medium flame stirring them occasionally so they don't get burnt at the bottom, just press with the spoon to see if they are cooked, once the potatoes break, means they are cooked inside. Now add the turmeric and red chili powder, mix and let it cook, meanwhile check for salt and add accordingly. Cook for 5 more mins, you could see the veggies are nice and roasted, garnish with coriander leaves and serve.
