Indian Mutton Curry/goat curry

This is my most favorite goat curry recipe, it is basically southern Indian style of authentic mutton curry. This curry is rich and delectable and it tastes divine with steamed rice, i was so excited to share this recipe as it turned out so good and i must definitely share it you with all.
Mutton - 1 kg
ginger garlic paste - 3 teaspoons
turmeric - 1/2 teaspoon
water - 1 cup
oil- 3 tablespoon
onion - 1 big finely chopped
tomatoes - 2 finely chopped
red chili powder - 2 teaspoon
curry powder - 2 teaspoon
garam masala - 1 teaspoon
pepper powder - 1 teaspoon
To grind
coconut - 1/2 cup
fennel seeds - 1 teaspoon
poppy seeds - 1 teaspoon
cashew nuts - 5 to 6
coriander leaves to garnish
To begin, take a pressure cooker, add the mutton. Why do we wanna pressure cook? because pressure cooking makes the mutton so tender within 20 minutes, so its quick. Along with the mutton i also added about 2 teaspoons of ginger garlic paste, turmeric powder, salt and a cup of water. Pressure cook for about 5 whistles. You can't find an Indian home without a pressure cooker. lol.
Once the mutton is cooked, keep them aside. In a wok, pour the oil, add the whole spices,fry on medium flame. To this add the onion, let the onion turn transparent, add a teaspoon of ginger garlic paste, saute for few seconds until the raw smell from the ginger garlic is gone. Add the spice powder such as the curry powder and red chili powder. remember to use mild to medium heat red chili powder. I prefer medium heat red chili. Add the tomatoes and allow it to cook for few minutes until it turns mushy and leaves oil around the sides. To this add the cooked mutton pieces, reserve the soup or water from the cooked mutton, which i will be pouring it later. Let the mutton absorb all the spices for about 15 mins on medium flame. Now add the mutton soup, mix gently. Meanwhile in a blender add all the fennel,poppy seeds,cashew nuts and grated coconut, grind them using water into a fine paste and add to the curry, this makes the curry rich and with distinct flavor. Finally add a teaspoon of garam masala, mix and a teaspoon of pepper powder for some extra kick, bring it to a boil and switch off the stove and garnish with coriander leaves.
I love to serve this curry with steamed rice or jeera rice. It also tastes great with naan,roti or any bread. This curry is absolutely mouth watering, i hope you give it a try and comment down below.
