CHEESY GARLIC VEGGIE PASTA

This is simple yet delcious dinner recipe to try, better way to incorporate veggies in your diet. Here is what you will need. I used whole grain penne paste which is healthier than regular pasta. Use any veggies of your choice, i used whats available in my pantry. Great as a lunch box recipe for kids.




Whole grain penne pasta - 3 cups
shallots/ small onions - 1/2 cup thinely sliced
green bell peppers/capsicum - 1/2 cup sliced
carrots - 1/2 cup sliced thin
tomato puree - 1 cup
dried italian seasoning - 1 teaspoon
olive oil - 2 tablespoon
garlic cloves - 5 finely chopped
chili flakes - 1/4 teaspoon
ground black pepper - 1 teaspoon
any grated cheese - 1/2 cup
parsley(optional) - few

PREP TIME: 10 mins                COOK TIME : 25 mins                   SERVINGS : 2


  • Heat a pan, pour the oil and garlic, add the italian seasoning
  • To this add the onions, carrots, suate on medium flame for 5 mins,
  • Add the bell peppers and saute for another 2 mins
  • Now pour the tomato puree to this, let it cook for atleast 7 mins, 
  • Boil and drain the pasta, add to the veggies, mix well and let it sit for 10 mins, until the flavors are absorbed. check for seasoning, if needed add salt as required. 
  • Add the ground pepper, finely chopped parsely,combine well and then switch off the stove.
  • Sprinkle the grated cheese on top and close the lid for few mins, you will notice the cheese melts with the pasta.
  • serve hot, great as lunch box recipe for kids and adults.
