HEALTHY FRUITS AND OATS MUFFINS



Muffins are great for breakfast, when it is healthy you can feed your kids and yourself guilt free. These muffins are rich in fiber as it is made with oats, pears and prunes which will help with constipation. They turned out really fluffy, moist and fruity makes an healthy go to snack. I made these muffins especially for my toddler, who is a picky eater, she enjoyed these. This is so easy and you can feed these for kids who doesn't like prunes, great to relieve constipation in kids. Muffins can be stored airtight at room temperature for 3 days, if  kept in the fridge it will last for about a week. These muffins are great as go to snack for kids and working adults.


Eggs - 2
Pear - 1 shredded or grated
prunes - 3
milk - half cup
oats - 1 cup
whole wheat flour - 1/2 cup
plain flour/all purpose flour -1 cup
vanilla essence - half teaspoon
egg - 1 beaten
brown sugar - half cup
canola oil/butter - half cup
cashew nuts - a handful chopped
baking powder - 1 teaspoon

PREP TIME : 15 mins            BAKE TIME: 40 to 45 mins 



grated pear
prunes blended with milk, pear and cashew nuts mixed
beaten egg
brown sugar and vanilla essence added
oats added
whole wheat flour and baking powder added
plain flour added
consistency of the muffin batter
fill half way into the muffin pan
baked for 40 mins on preheated oven 350F
       
  • Preheat the oven to 350F.
  • In a mixing bowl, add the egg, beat well, to this add the brown sugar and butter, beat well until it is combined nicely.
  • In a separate bowl, peel the pear skin and remove the seed and begin to grate using a grater or food processor so it gives nice texture.
  • Now in a blender, add the prunes and milk blend it well and pour to the fruits. Combine well, into this drop the cashew nuts, this gives a nice crunch and a nutty flavor. Now add the fruits mixture to the egg mixture, combine well, to this add a dash of vanilla essence.
  • Next drop the oats, mix well. Now add the whole wheat flour and baking powder, gently fold it in, next add the plain flour, fold well.
  • Pour about a 3 table spoon of oil, as I'm making this for my kids, I added some extra fat and also the oil make it really moist and tasty. Mix well and bring that to a thick batter consistency.
  • Grease the muffin pan with oil or butter. Pour the batter half way as shown in the picture, so it has room to rise.
  • To the preheated oven,bake the muffins for about 40 to 45 minutes depending on the oven you use. Insert a toothpick , if it comes out clean the muffins are ready. Wait until it cools down and place it in a serving plate.
Note:
If the batter is thick, adjust using milk.
