HEALTHY BLACK CHICK PEA, LETTUCE SALAD, Weight loss recipe

Super easy and healthy salad, can be prepared in no time, Here is what you will need.

boiled /canned black chick peas - boiled 1 cup
lettuce - 1 cup chopped
boiled whole mung beans - 2 tablespoon
peanuts - 2 tablespoon
sunflower seeds - 1 tablespoon
for dressing
light sour cream - 1 tablespoon
ground pepper - 1/2 teaspoon
lemon juice - 1 teaspoon
salt - 1/4 teaspoon

You can use any lettuce of your choice, i used ice berg lettuce, which was available in my pantry, just wash the lettuce and drain the water or pat dry them completely. I used black chick peas as they are more nutritious and healthy than the regular chick peas. I used the dried variety, where it was soaked overnight and then boiled them in a pressure cooker with some water. In this way the peas can be prepared ahead of time. For the dressing, just add the sour cream in a bowl, add salt, pepper and lemon juice, combine them and keep aside. I used light sour cream, as they are low in fat. Next in a salad bowl, add the black chickpeas, lettuce, peanuts, sunflower seeds, mung beans, pour the dressing, combine well. The nuts give nice crunchiness to the salad, whereas the mung beans and chick peas tastes yum with the dressing. Qucik and healthy salad ready to serve.
TIPS
- If you dont have mung beans, add few slices of avocado, it tastes great
- Light sour cream, can also be substituted to greek yogurt.
